Pumpkin Roll

Today I'm going to try to make a pumpkin roll. My mother-in-law makes it and it's delicious. The hubby is super excited! Anything I make that his mom makes is a treat for him. He's a momma's boy. lol. Here's the recipe:

For the cake part:
3 eggs
1 cup sugar
2/3 cup pumpkin puree
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

Beat eggs on high for 5 minutes. Gradually beat in sugar. Stir in pumpkin puree and lemon juice. Mix other ingredients separately and add to pumpkin mixture. Spread out on greased floured cookie sheet. Bake at 375 for 15 minutes.
Turn out on dishtowel that has been spread with powdered sugar, roll up in towel while still hot and let cool. When cool, unroll and add filling.

For filling:
1 cup powdered sugar
2 3oz packages cream cheese
4 Tbsp margarine
1/2 tsp vanilla

Mix together and spread on. Roll up and refrigerate.
